Wow, as a Portuguese guy, my immediate thought was this, but I guess it's technically impossible for the most of us... But general mosaics and tessellations are a good idea too.
I don't know if I said it before but I'll most certainly never enter contests with food items (except, if I'd ever learn how to, cooking and/or baking).
Currently Illo and MM are separate areas so maybe Engraving is something a little out. Or maybe not...
Linoleum could be a good medium.
Pyrography
Stained glass (real or faux)
Wire work (but, please, with any ammount of strands. And weld too) =)
Some of the ones I attempted a while back against various people:

paper animals;
cartoon cutouts (book covers);
real life layers (what PS layers would be like in real life)
And how about making something from materials that are indigenous to where you come from?
I'm sure if I set my mind to it I can come up with some more weird materials to use :)

Here's one of the ideas for a H2Hthat Kook and I DIDN'T get done
Make something (anything!) using a piece of string. Any length of string will do. For the purposes of this “string” can include twine or thin rope but NOT thread i.e. NO embroidery!!! Other materials may be used as well, but the main ingredient MUST be string. The string may be cut into lengths; it does not need to be one single piece (although there would be extra kudos if you did only use one!)
I will keep thinking ...
We ran that, twice if you count the bacon sculptures.
But those were really fun, and we will surely do re-runs, won't we, M'lady Kooks? So be on the lookout. :)

Could also be cool to do something like ping pong ball sculptures? Create something interesting using ping pong balls as your main material. :D
1. Duct tape sculptures: I did this one with my students once. I think I still have the photo of the hat I made that looked like I was driving a jeep
2. LOL I also did maggot art with my students (dipped maggots in some paint then let them wiggle around), but I dont see that one catching on here.

Yes, we talked about duct tape before and I think it is a great idea. The town right next door to where I live is the Duck Tape Capital of the World (yes, Duck brand duct tape). They have a big festival every year and people make all kinds of crazy stuff out of duct tape.

I find ones that really constrain what you can use (or have a very short build time) really bring out the best ideas from me, and I enjoy them the most.
Here's one that may not be in the right arena, but which would be fun anyway. Recreate a classic LOLCAT but using people instead of cats. A link to the original is required for comparison.
I will keep thinking - oooohhhh, that hurts!!!
